When most travelers think of Hida beef in Takayama, the first things that come to mind are usually yakiniku or steak. Both are worth trying, but there’s another way to experience it: creative cuisine, or sōsaku ryōri.

One restaurant that takes this approach is Sōsaku Kyōdo Sushi Honpo Kyoshi, known locally as Kyoshi. What sets it apart isn’t just the quality of the beef. The kitchen balances the richness of Hida beef with vinegared rice, dashi, and condiments to keep the dish from feeling heavy. It’s a lighter, more layered way to eat beef than you might expect.

The most popular item on the menu is the Hida Beef Hitsumabushi. You eat it three ways: first on its own, then with condiments added, and finally with dashi poured over the top. Each round tastes a little different, which keeps it interesting all the way through.
