If you visit Takayama City in Gifu Prefecture, you must try “Hoba Miso.” This local specialty is made by placing walnuts, green onions, and mountain vegetables along with locally produced red miso on a magnolia leaf (hoba), then grilling it until fragrant. There are various types available, from sweeter to spicier flavors.

The magnolia leaf is said to have antibacterial properties and has been used in the Hida region for food preservation and cooking since ancient times. When slowly grilled over charcoal or a stovetop, the aroma of the miso blends with the natural fragrance of the leaf, creating a truly appetizing dish.
Our favorite way is to enjoy it with white rice for a simple yet satisfying flavor. Many traditional ryokans (Japanese inns) and restaurants offer it as part of breakfast or within traditional Japanese set meals (teishoku), making it easy to experience this local taste. Another way to enjoy it is to grill Hida wagyu beef and the hoba miso together directly on top of the magnolia leaf! Known as “Hoba Yaki,” many restaurants will prepare a small stone grill at your table and cook the Hida beef before your eyes so you can enjoy it piping hot.
