Takayama is famous for Hida beef, local mountain vegetables, and surprisingly fresh seafood! While Takayama is surrounded by the Japan Alps, it has direct access to fresh seafood from the Sea of Japan, brought in daily from Toyama Prefecture. Thanks to modern logistics, premium fish from Tokyo’s Toyosu Market also arrives regularly.
What makes Hida vegetables special is the dramatic temperature difference in the Hida Takayama region. There is a difference of about 15°C (27°F) between day and night throughout most of the year! This happens because Takayama sits at 500 meters above sea level in the mountains. These temperature changes make the vegetables firmer and more flavorful, and the water from the Northern Alps also contributes to the exceptional taste.
